בייגלה "כמו פעם", דחוס, לעיס וטעים מאוד, שמזכיר את אלה שהיו מוכרים פעם בתחנה המרכזית הישנה. חטיף מצוין לאירוח, לפיקניק או "סתם" לנישנוש מול הטלויזיה. המתכון מתאים להכנת שמונה כעכים בגודל בינוני.

מתכון לחלה טבעונית

המצרכים

830 גרם קמח לחם לבן
כף מלח (20 גרם)
כפית שמרים יבשים (3 גרם)
כף סוכר חום (15 גרם)
500 מ"ל בירה

להרתחה:

3 ליטר מים רותחים
כף מולסה או סילאן (15 גרם)
25 גרם סודה לשתיה

לציפוי

מלח, שומשום, קצח, זעתר וכד' (לא הכרחי)

הוראות הכנה

מנפים את הקמח לקערת המערבל, מוסיפים את השמרים והסוכר ומערבבים היטב. מוסיפים את המלח ומערבבים שוב. מפעילים את המערבל, עם וו לישה, במהירות נמוכה ויוצקים פנימה את הבירה, תוך כדי לישה. לשים במשך כשמונה דקות, עד שמתקבל בצק נוקשה יחסית וגמיש.

מתכון לחלה טבעונית

בתום הלישה, מגלגלים את הבצק לכדור ומניחים בתוך קערה מכוסה בניילון נצמד או במגבת לחה. מניחים לתפיחה עד להכפלת הנפח, כשעה. מחממים תנור לטמפרטורה של 250 מעלות.

לאחר סיום התפיחה, מרתיחים בסיר (לא מאלומיניום!) את המים, המולסה והסודה לשתיה.

מחלקים את הבצק לשמונה חתיכות שוות. מגלגלים כל חתיכה ל"חבל" באורך של כחמישים סנטימטרים. אם הבצק לא נמתח לאורך הרצוי, מניחים לו לנוח מעט ומגלגלים שנית.

מעצבים מכל "חבל" צורת כעך קלוע, כמודגם בסרטון. אחרי שמסיימים לעצב את הכעכים, מכניסים אותם, אחד אחד, לסיר ומבשלים במשך כדקה. הופכים את הכעך ומבשלים דקה נוספת. מוציאים את הכעך מהמים ומניחים על מגבת מטבח.

מפזרים על צלחת את הציפוי הרצוי: מלח, שומשום, זרעי פשתן וכיוצא בזה. מגלגלים את הכעכים בציפוי, ומניחים על מרדה או על תבנית מכוסה בנייר אפיה.

מכניסים את הכעכים לתנור ואופים במשך כחמש-עשרה דקות, עד שהם מקבלים צבע שחום. אם נראה שהם משחימים מהר מדי, מניחים מעליהם רדיד אלומיניום.
