קשה להכין לחם בסיסי יותר מזה: רק קמח, מים, מלח ושאור. אבל התוצאה? פנים אוורירי ורך, קרום מתפצח והטעם... בקיצור: כמה פשוט – ככה טעים.

לחם שאור לבן

המצרכים

לביגה:

200 גרם קמח לחם לבן
200 גרם שאור
100 מ"ל מים

לבצק

600 גרם קמח לחם לבן
כפית וחצי מלח
350 מ"ל מים

הוראות הכנה

מכינים את הביגה: מנפים את הקמח לקערה קטנה. מוסיפים את השאור וחצי מכמות המים ומערבבים עד לקבלת בצק אחיד. אם יש צורך, מוסיפים עוד מהמים שנותרו. מכסים את הקערה בניילון נצמד ומניחים בטמפרטורת החדר למשך כשמונה עד שתים-עשרה שעות.

מכינים את הבצק: מנפים את הקמח לקערה. חותכים את הביגה לחתיכות קטנות ומוסיפים לקמח. שופכים 300 מ"ל מים ומערבבים עד לקבלת בצק אחיד ומעט דביק. אם יש צורך, מוסיפים עוד מהמים.
לשים במשך כעשר דקות. מכסים את הבצק בקערה הפוכה ומניחים למשך רבע שעה. לאחר ההמתנה, לשים את הבצק עוד כחמש דקות, ומוסיפים את המלח לבצק תוך כדי לישה.

מגלגלים את הבצק לכדור ומניחים אותו בקערה משומנת. מכסים את הקערה בניילון נצמד או במגבת לחה וממתינים עד להכפלת נפח הבצק, כשלוש שעות.
מוציאים את הבצק מהקערה ומניחים על משטח מקומח, תוך שנזהרים שלא להוציא ממנו את האוויר. חוצים את הבצק לשתי חתיכות שוות. מעצבים מכל חצי מלבן עבה. מגלגלים כל מלבן לכיכר גלילית וצובטים את קו החיבור שבתחתית הכיכר.

מניחים את הכיכרות על מרדה או תבנית המכוסה בנייר אפייה. בעזרת סכין חדה, חורצים חריץ לאורך הכיכר. מכסים במגבת לחה ומתפיחים שנית, עד להכפלת הנפח, כשעתיים.

מחממים תנור לטמפרטורה של 220 מעלות ומניחים על תחתית התנור תבנית ריקה. מעט לפני הכנסת הכיכרות לתנור, שופכים כוס מים קרים על התבנית הריקה, ליצירת אדים בחלל התנור. מכניסים את הכיכרות ואופים במשך כארבעים דקות, עד שהכיכרות שחומות ונוקשות, וטפיחה על תחתיתן תשמי צליל חלול.
מוציאים את הכיכרות ומצננים על רשת למשך כחצי שעה.
