ספר זה נועד להדריך את הקורא בהכנת לחם ומיני מאפים אחרים במטבח הביתי. הספר כולל כ-65 מתכונים, הכוללים מתכונים ללחמים, למאפים מתוקים (בריוש, קרואסון וכד') ולפיצות. כן כולל הספר מתכון לשאור וטיפים שונים לעבודה.
כל המתכונים שבספר מצריכים שימוש במערבל חשמלי בעצמה של 800 ואט ומעלה. למרבה הצער, הדבר אינו מצוין על גבי הכריכה וגיליתי זאת רק לאחר הקנייה.
לדעתי, חסרים בספר פרטים רבים. אין בו כל התייחסות לגבי לישה ידנית (למעט הצהרה כי לישה במערבל עדיפה על לישה ידנית), לגבי אופי הבצק שנוצר, מראהו, דחיסותו וכיוב'. כמו כן, חסרו לי הוראות פשוטות, כגון הנפח אליו אמור הבצק להגיע בגמר תפיחתו.
הטענה העיקרית שלי בנוגע לספר, היא שאף אחד מהמתכונים אותם ניסיתי לא יצא דומה לתמונה או לתיאור הלחם במתכון. ייתכן והדבר באשמתי, אבל ניסיון עם ספרי אפייה אחרים הניבו תוצאות טובות בהרבה.
הספר הזה אכזב אותי. הוא לא העשיר את הידע שלי באפייה והמתכונים המופיעים בו אינם מוצלחים, לטעמי. לסיכום – אפשר לוותר.

לדעתי, ולאחר שניסיתי גם כמה ספרים אחרים, הספר הזה עושה עבודה נהדרת.
אני מסכים מאוד עם הביקורת שחסר תיאור של הבצק שאמור להתקבל, דחיסותו וכן הלאה, אבל הוראות העבודה פשוטות וברורות מאוד, הכמויות המצוינות במתכונים מדויקות וניכר שנעשתה עבודת הכנה רצינית מאוד כדי להביא את כל המתכונים בצורה שתתאים לאופה הביתי והמתחיל.
מעבר לזה, התוצאות שמתקבלות (אמנם עם מיקסר חשמלי חזק) - הן לא פחות מנהדרות.
לכל מי שיש לו מיקסר - אני ממליץ בחום על הספר.

יש לי הספר זמן רב. את כל המתכונים שעשיתי ממנו ועשיתי לא מעט לשתי בלישה ידנית ולא במיקסר. התוצאות היו טובות מאוד. מי שיש לו אפילו רק מעט נסיון בעבודה עם בצקי שמרים, העובדה שלא מתואר במדויק מרקם הבצק לא מפריעה. אני ממליצה על הספר בחום רב.
