לחם שאור שיפון עם בירה ותאנים

הלחם הזה דורש זמן. הרבה זמן. מצד שני, בזמן הזה הוא תופח לבדו, בלי עזרה, ובסוף התהליך מתקבל לחם שכולו על טהרת השיפון - אבל רך ואוורירי יחסית. וממש, אבל ממש, טעים. התאנים שבהם השתמשתי הן מקונפיטורה ביתית מצוינת, ניתן להמירן בדבלים קצוצות, או בפירות מקונפיטורה אחרת.

מתכון ללחם שיפון עם בירה ותאנים

המצרכים

200 גרם שאור
670 גרם קמח שיפון מלא
100 גרם רסק תפוח
100 גרם קונפיטורת תאנים, או דבלים קצוצות.
כף רכז חרובים (20 גרם), ניתן להמיר בסילאן
2 כפיות מלח (12 גרם)
כף רכז חרובים (15 גרם), ניתן להמיר במולסה או בקרמל
500 מ"ל בירה

הוראות הכנה

מכינים את רסק התפוח: מקלפים תפוח בינוני, חותכים אותו לקוביות ומבשלים עד שפיסות התפוח רכות. מסננים את המים, מעבדים למחית אחידה ומצננים.

מכינים את הבצק: יוצקים לקערה גדולה את הבירה. מוסיפים את רסק התפוח ואת רכז החרובים, ומערבבים. מוסיפים את השאור ומערבבים היטב, עד להתמוססותו במים. מוסיפים את פיסות התאנים ומערבבים שוב.

מנפים את קמח השיפון למים, תוך כדי ערבוב. מוסיפים את המלח ומערבבים היטב, עד שמתקבלת עיסה אחידה ודביקה (מאוד). מכסים את הקערה בניילון או במגבת מטבח לחה ומניחים לעשר דקות.

מתכון ללחם שיפון עם בירה ותאנים

מרטיבים מעט את כפות הידיים ו"מקפלים" את הבצק כעשר פעמים. מכסים שוב את הקערה ומניחים לרבע שעה. בתום הזמן חוזרים על פעולת הקיפול והמנוחה, עוד פעמיים.

משאירים את הבצק בקערה המכוסה לתפיחה הראשונה, בין שתים-עשרה לעשרים וארבע שעות. זמן התפיחה הסופי תלוי מאוד באיכות השאור שבו השתמשתם. בתום הזמן הבצק יהיה תפוח מאוד ויראו בו בועות רבות.

בתום התפיחה הראשונה, מרפדים שתי תבניות כיכר בנייר אפייה. מקמחים היטב את הידיים, ומוציאים מחצית מהבצק (הדביק מאוד) מהקערה, וממלאים בה את התבנית הראשונה. בעזרת מרית, מחליקים את פני הכיכר. חוזרים על הפעולה ומכינים את הכיכר השנייה. שימו לב: הבצק יהיה דביק מאוד ובעל מרקם דמוי חימר.

מתכון ללחם שיפון עם בירה ותאנים

מכסים את התבניות במגבת לחה ומניחים לתפיחה שנייה, למשך כשלוש שעות. הכיכרות יתפחו, אך לא יכפילו את נפחן.

מחממים תנור לטמפרטורה של 220 מעלות ומניחים על תחתית התנור תבנית ריקה. מכניסים את התבניות עם הבצק לתנור ויוצקים על התבנית שבתחתית כוס מים קרים, ליצירת אדים.

אופים במשך כ-50 דקות. אם חלקן העליון של הכיכרות משחים מוקדם מדי, מניחים מעליהן רדיד אלומיניום וממשיכים באפייה. לאחר כשלושים דקות, מוציאים את הכיכרות מהתבניות וממשיכים לאפות אותן בלעדיהן. בודקים אם הלחם מוכן על ידי נקישה על תחתיתו - אם הכיכרות משמיעות צליל חלול, הן אפויות די.

מוציאים את הכיכרות מהתנור ומצננים על רשת במשך כחצי שעה.
