לחם בירה שחורה עם צימוקים
בלחם זה משמשת "בירה שחורה" (משקה מאלט) כנוזל היחיד. הסוכרים שבמשקה מעניקים ללחם טעם מתקתק-מריר, המשתלב היטב עם הצימוקים הנוספים לבצק. זהו לחם רך וטעים, המשלב את ערכו התזונתי של המשקה עם הקמח המלא. מתכון זה מספיק להכנת שתי כיכרות קטנות, או כיכר אחת גדולה.
המצרכים
- 240 גרם (כשתי כוסות) קמח לחם לבן
- 240 גרם (כשתי כוסות) קמח מלא
- 330 מ"ל (בקבוק אישי) בירה שחורה (לא אלכוהולית), בטמפ' החדר
- כפית וחצי מלח
- 2 כפיות שמרים יבשים
- 70 גרם צימוקים לבנים
- מעט קמח לבן לקימוח
הוראות הכנה
כשעתיים לפני הכנת הבצק מניחים את הצימוקים בקערה קטנה, מכסים במים חמימים (כחצי כוס) ומשרים.
מנפים את הקמח המלא והלבן, חוץ מכ-50 גר' קמח לבן, לקערה גדולה. מוסיפים את המלח ומערבבים עד שהמלח מתפזר בקמח באופן אחיד. מוסיפים את השמרים ומערבבים שוב.
מוסיפים לתערובת את הבירה ומערבבים עד ליצירת עיסת בצק אחידה.
לשים על משטח מקומח במשך כ-7 דקות. אם הבצק דביק מדי, ניתן להוסיף מהקמח שהשארנו בצד. מסננים את הצימוקים מהמים ומוסיפים אותם בהדרגה לבצק, תוך כדי לישה. לשים עוד כשלוש דקות.
מניחים את הבצק בקערה משומנת, מכסים בניילון נצמד או במגבת לחה ומניחים לתפיחה, עד שהבצק מכפיל את נפחו (כשעתיים-שלוש).
מוציאים את הבצק מהקערה למשטח מקומח קלות. משטחים להוצאת האוויר מהבצק ומחלקים לשני חלקים שווים. יוצרים מכל חלק כיכר מאורכת ומגלגלים בקמח לבן.
מניחים את הכיכרות על תבנית ומכסים במגבת. מניחים לתפיחה שנייה, עד שהכיכרות מכפילות את נפחן (כשעה עד שעה וחצי).
מחממים תנור לחום של 220 מעלות ומניחים תבנית ריקה בתחתיתו. לפני הכנסת הלחם לתנור, שופכים כוס מים קרים על התבנית שבתנור, ליצירת אדים.
חורצים שלושה חריצים אלכסוניים בכל כיכר ומכניסים לתנור.
אופים במשך כ-40 דקות, עד שהכיכרות משחימים ונקישה על תחתיתם משמיעה צליל חלול. מצננים על רשת.

האמת שבדקתי את העניין עם אשת מקצוע. מדובר בחישובים לא פשוטים - למשל, יש להביא בחשבון את צריכת הסוכרים על ידי השמרים, מה שתלוי בכמות הסוכר, השמרים, טמפרטורת התפיחה, משך התפיחה... וזה רק לגבי הסוכרים שבמתכון.

לאחר האפיה אפשר לשקול את הלחם ולשקול פרוסה ממוצעת, ולחשב כמה קלוריות יש בפרוסה ו/או במאה גרם לחם.
