גלילות קינמון (Cinnamon Rolls)

גלילות קינמון מתוקות, שיפיצו ריח מדהים בבית ויגרמו לשכנים לקפוץ לביקור לא מתוכנן... המתכון שמובא להלן מבוסס על זה שמופיע בבלוג The Slow Roasted Italian, ויניב 16 גלילות.

מתכון לקלצונה

המצרכים

לבצק:

660 גרם קמח לחם
2 כפיות שמרים (6 גרם)
2 כפיות מלח (12 גרם)
100 גרם סוכר לבן
100 גרם חמאה מומסת
2 ביצים, טרופות (120 גרם)
60 גרם רויון
240 מ"ל מים חמימים

למלית:

80 גרם חמאה מומסת
350 גרם סוכר חום
3 כפות קינמון טחון (30 גרם)
כפית קורנפלור (4 גרם)

לרוטב:

30 גרם גבינת שמנת
50 גרם חמאה מומסת
60 גרם שמנת מתוקה
50 גרם אבקת סוכר
כפית מלח (6 גרם)
60 מ"ל קפה חמים (נס קפה או אספרסו)

הוראות הכנה

יוצקים את המים לקערת מיקסר. מוסיפים את הסוכר הלבן ובוחשים, עד להמסת הסוכר במים. בוזקים את השמרים היבשים על פני המים וממתינים כחמש דקות. בתום הזמן, השמרים אמורים להתחיל לתסוס.

בקערה קטנה מערבבים את הביצים הטרופות, החמאה המומסת והרויון. מוסיפים את התערובת לקערת המיקסר ומערבבים היטב. מפעילים את המיקסר, עם וו לישה, על מהירות נמוכה. מתחילים להוסיף את הקמח לעיסה, מעט בכל פעם. תוך כדי הוספת הקמח, במוסיפים גם את המלח לתערובת, בהדרגה. לשים במשך כעשר דקות, עד שנוצר בצק אחיד, צהבהב, רך ומעט נוזלי - אך לא דביק. שימו לב - ייתכן ולא תזדקקו לכל הקמח שבמתכון.

מתכון לקלצונה

בתום הלישה, מעבירים את הבצק לקערה גדולה, משומנת מעט חמאה. מכסים במגבת מטבח לחה או בניילון נצמד ומנחים למשל כשעה וחצי, עד שהבצק מכפיל את נפחו.

בתום התפיחה, מוציאים את הבצק ומניחים על משטח מקומח היטב. לשים את הבצק מעט בידיים, על מנת להוציא ממנו את האוויר. בעזרת מגרד בצק, חוצים את הבצק לשני חלקים שווים, ומגלגלים כל חצי לכדור. מכסים את אחד החלקים במגבת לחה.

מקמחים היטב את משטח העבודה ומניחים עליו את כדור בצק. בעזרת כפות הידיים, יוצרים מהבצק מלבן גס. מרדדים עם מערך, עד שמתקבל מלבן דק, האורך של כשישים (60) וברוחב של כשלושים (30)סנטימטרים.

מתכון לקלצונה

מערבבים בקערה קטנה את הקורנפלור, הקינמון והסוכר החום. מושחים את הבצק בנדיבות בחצי מהחמאה המומסת, אך משאירים מרווח של כארבעה סנטימטרים ללא חמאה, לאורך אחת מצלעות המלבן הארוכות (דבר זה יסייע לבצק להיצמד טוב יותר כאשר נגלגל אותו).

בוזקים על החלק המכוסה בחמאה חצי מתערובת הקינמון. מגלגלים בעדינות את המערוך על הבצק, על מנת להצמיד אליו את התערובת.

מתכון לקלצונה

מקפלים את הדופן הרחבה של המלבן, זו שיש עליה מלית, כלפי פנים. מגלגלים את הבצק לאט ובזהירות, תוך ניסיון ליצור "נקניק" בצק הדוק ככל הניתן.

מתכון לקלצונה

חוצים את ה"נקניק" שהתקבל באמצעיתו, ואז חוצים כל חלק פעמיים נוספות - עד שמתקבלות שמונה פיסות של בצק מגולגל.

מתכון לקלצונה

מרפדים תבנית כיכר בנייר אפייה, ומניחים בה את גלילי הבצק בשתי שורות. מניחים את הפיסות הקיצוניות של ה"נקניק" כאשר הצד הרחב (שבו רואים את המלית) כלפי מעלה. מכסים את הבצק במגבת לחה.

חוזרים על הפעולות עם מחצית הבצק השנייה.

מניחים לגלילות הבצק לתפוח שנית, במשך כשעה עד שעה וחצי. מחממים תנור לחום של 180 מעלות.

מתכון לקלצונה

אופים את גלילות הקינמון במשך כחמישים דקות. הגלילות מוכנות כאשר חלקן העליון בצבע שחום-זהוב ושיפוד הננעץ בבצק יוצא יבש. אם הגלילות משחימות לפני שהבצק מתייבש בפנים, יש להניח עליהן רדיד אלומיניום ולהמשיך באפייה.

מתכון לקלצונה

מכינים את הרוטב: בזמן האפייה, יוצקים לקערת מיקסר את החמאה המומסת, השמנת, הקפה (נס קפה או אספרסו) וגבינת השמנת. מערבבים היטב בעזרת מקצף, תוך כדי הוספת המלח ואבקת הסוכר. מערבבים עד שמתקבל רוטב סמיך ואחיד, ללא גושים.

כאשר הגלילות אפויות, מוציאים את התבניות מהתנור ומניחים אותן, כשהגלילות בתוכן, לצינון. יוצקים מהרוטב על הגלילות. ממתינים לפחות חצי שעה לפני האכילה - אם מצליחים להתאפק!
